Mint Mojito Smoothie Recipe

Three days deep into daylight savings, those! Have you kaput made known your kilt, Ray Bans, deck furniture, and margarita glasses? One superfluous hour of daylight and already I’m fantasizing in this area laying on the beach with my snorkel mask on and cocktail in-hand. Except by “laying,” I mean “riding,” by “beach,” I mean “mountain bike,” by “snorkel mask,” I mean “helmet,” and by “cocktail,” I mean “water bottle.” So in effect, I’m equipped for summer, I dunno in this area you’uns.

And since I’m OBSESSED with coconut milk in all its creamy coconut-y magnificence, lone of the recipes I built-in in my tome is this exact Mint Mojito Smoothie. The lime, the coconut, the banana, mint…It’ll hang with you on the beach (it’s lazy)…or in your fill up bottle (it’s versatile). If you aspire, you can deposit alcohol in it (encouraged).
Mint Mojito Smoothie Recipe

Ingredients

- 2 bananas, overripe and frozen
- 12 mint leaves, fresh
- 1/2 cup plain kefir
- 1/2 cup coconut milk, full fat from the can
- 1/2 cup almond milk
- 1 tablespoon fresh lime juice
- 1 tablespoon agave syrup

Directions

- Add all ingredients to a high-powered blender, and blend until smooth. Enjoy!
