Smoothie Recipe: Lime and Mint

This refreshing Smoothie Recipe is full of fresh lime and mint.  All of the great flavor of cocktail without all of alcohol and  that pesky sugar.  The perfect start to healthy new year!

After all of the holiday sweets and treats it is time for a sugar detox!  Now let’s not get crazy.  I’m not totally off my sugar high.  But I do plan on drinking more smoothies and eating less M&M’s.  Baby Steps.

The lime and mint combination tastes clean and energizing. This Mojito Smoothie Recipe is unbelievably refreshing!
Mojitos were one of my favorite cocktails.  And now this is one of my favorite smoothie flavors. This smoothie will give you nice breathe too. Bonus! Fresh mint is the star. Creamy coconut and tangy lime bring a little tropical flavor to this pool-side drink.

Ingredients

- 2 Cups Ice
- 1 Cup Plain Coconut Milk
- 2 Small Limes - Juiced
- Handful of Fresh Mint (approx 15 leaves)
- 1-2 Tb Honey*

Instructions

- Blend all ingredients.
- Serve & Enjoy!

Notes

* Use your sweetener of choice. I prefer using honey or Truvia.
* Servings: 1-2

So obviously, eating healthier is one of my 2014 goals.  Along with learning to play acoustic guitar and spending a lot less time on social media!
